When I was in kindergarten, we made cookbooks for our parents and this is the one recipe that I remember and still love to this day! I even featured it in a Christmas recipe swap I was in. It’s great to have the kids help make the mix into balls and roll them around in the icing sugar.
Easy Refrigerator Cookies
- 3/4 cup butter
- 3/4 cup white sugar
- 3 tablespoons unsweetened cocoa powder
- 1/2 teaspoon vanilla extract
- 1 tablespoon water
- 2 cups rolled oats
- 1/3 icing sugar for decoration
Soften butter and beat well. Add sugar and mix well. Add cocoa, vanilla and water. Then add oatmeal.
Shape into 36 bite-sized balls and roll in icing sugar. Keep in refrigerator.
Pro tip – swap the sugar for icing sugar and omit the oats, tastes great as a sandwich spread!
